Sometimes, I really hate xbox one’s force app updates. For instance, in this case, The updated app can no longer connect to -any- plex servers on the same network. Even if the server is set to “unsecured”.
As it stands, the plex app no longer runs on XBox One.
Please redeploy the previous version until this bug is fixed… this really sucks that this happens every few months >:(

I have this too, but it’s weird.
When Plex asks “Would you like to allow insecure connections?”, I clicked no, and rather than leave the app, I clicked the “No Server Selected” button. My server was there, and allowed me to select it. Not sure if this will apply in your case, but it’s sorted mine, even if I have to do it every time the app starts from
I didn’t have the issue with the app update, but occasionally when I update my server none of my devices can find my local server until I switch user in my Plex home
