Are we supposed to see some kind of notice about a video being tone mapped whenever this is happening? I usualy look at the dashboard, to see what kind of transcoding (or lack of transcoding) is happening server-side, and I never saw any note about HDR content being tone mapped. I watch stuff on SDR players and they get “Direct Streamed” or “Direct Played” without any mention of tone mapping, yet the video looks OK.

If tone mapping is enabled, and Plex Media Server is transcoding HEVC HDR to H.264 SDR, then it will be tone mapped.
Any transcoding, tone mapping, etc. performed by the client is not displayed by the Plex Dashboard. The Dashboard shows only what happens with the server.
Example: My computer monitor is 1080p SDR. Using Plex for Windows, 4K HDR movies direct play. Plex for Windows performs the scaling, tone mapping, and TrueHD audio conversion.
