I am having issues with the transcoder crashing. I have tried this using Amazon Fire TV, the app on the Samsung TV, and on the Shield TV (Android TV). During a 22 minute episode, it crashed 4 times. I am running PMS version 1.9.5.4339 on a Mac OSX version 10.12.6. I wasn’t able to get the logs as this happened yesterday and the logs have rolled over and only go back 5 versions which is dated back to today only. When I see this occur again I will try to grab the logs.
I have attached the logs after the crash occurred about 3 times.
Try turning off hardware encoding and/or downgrading to an older version of PMS.

This is a transcoder crash
Appears to be similar to that reported by two other users - Forum Threads

The issue was referred to the development team and we need more diagnostics
Could you see if the problem arises with a short clip - say a 5-10 minute clip produced from the mkv using mkvtoolnix
We need to enable some extra transcoder logging
See this support article which covers how to manually add settings
https://support.plex.tv/hc/en-us/articles/201105343-Advanced-Hidden-Server-Settings
The preferences on Mac OS are in this file
~/Library/Preferences/com.plexapp.plexmediaserver.plist
The preference that we need to add is as follows
defaults write com.plexapp.plexmediaserver TranscoderLogLevel "verbose"
Once this is added to the server preferences, please restart the server and reproduce the problem - if possible with a shorter clip so that can be provided with the logs
Thanks

I have not been able to reproduce this error after the last update. I will keep an eye on it. However, I have not had a lot of time to test it out. I still have the verbose logging enabled.
18 months down the track, we have recently discovered that these specific transcoder errors are currently due to Malwarebytes Premium blocking some localhost Plex Transcoder requests.
I do not know if you were using a version of Malwarebytes on the Mac (or may be some similar software)
A Support Article has now been published for this problem on Windows - if you were using Malwarebytes for Mac then I will update the article to also mention Mac OS
The specific errors this relates to is this error together with other errors
ERROR - [Transcoder] av_interleaved_write_frame(): Unknown error
coupled by
Examples
ERROR - [Transcoder] [stream_segment,ssegment @ xxxxxxx] Failed to open segment list 'http://127.0.0.1:32400/video/:/transcode/session/xxxxxxxxxxxxxxxxxxxxxxxx/xxxxxxxxxxx/seglist
