Trouble installing Plex on Fresh Ubuntu 18.04 build

I’m trying to install Plex Media Server on a headless Ubuntu Server 18.04 virtual machine (VMWare ESXi 6.5).
Have tried several times (with fresh Ubuntu server builds) with varying results but ultimately no luck. Best case is getting to web gui claiming the server, adding a media folder but then getting stuck. But in most cases I can’t get the plex service started at all.
I use these commands for the download and install:

wget https://downloads.plex.tv/plex-media-server-new/1.15.6.1079-....deb

sudo dpkg -i plexmediaserver_1.15.6.1079...deb

On a number of occasions my SSH connection will be disconnected after trying to install plex with the command above. I then need to restart the VM and ssh back in.
On the times I’ve managed to get to the web gui (which then gets stuck), I’m unable to SSH back into the Ubuntu server irrespective of how long I wait or if I restart the Ubuntu VM. I’ve tried this with and without UFW being active but can’t see any correlation. So I end rebuilding the vm from scratch.

I’m new to Ubuntu but I have been trawling the forum over the last few days and can see commonalities with some of the issues I’m having but I can’t pinpoint my problem, I also haven’t seen any posts related to the ssh disconnects I seem to experience when trying to install Plex. I have tried this with and without a static ip address, and shutting down another one of my VMs which has PMS but on a different OS (runs poorly hence why I’m trying to get this running on Ubuntu), but again I can’t see any correlation.

I’ve attached output from various commands that @ChuckPa seems to request of others so I hope this is of some use. This is of my latest attempt which is representative of my previous attempts. Any help appreciated.

If Ubuntu is fully up to date (software updates), and you’re still having VM trouble, there was someone who reported actual VMware issue. I do not remember the version which corrected it but think 13. 13 was either the problem or solution. Backing down to the previous one solved it.

As for the SSH session, it’s very standard:

ssh -L 8888:127.0.0.1:32400 ip.addr.of.host

sign in and let that sit.

Open http://127.0.0.1:8888/web in an incognito browser window.
