Trying to use Plex out of the video out of the server itself

So! I would like to make a Plex server for my roomate, but he doesn’t want to stream-only (away from home is fine. But in home, he wants as close to lossless as he can).

So, overall goal is to play media files off the server using a GUI, and NO conversion/compression from the source file if possible, while allowing streaming.

How would I search for how to play a movie on the Plex server out of its video output (HDMI/DVI) as well as running it the way it does now.

I’d like to run it off Linux, so the OS had a minimal load on the computer, but maybe run an X Server that only displays a media player?

I have no idea what I would search for, or if this is possible, but any help is appreciated.

Install Plex Media Player and use it instead of the web app.
You install it additionally to the server.

Only use Linux if you are already accustomed to it. This machine has to run the server as well, so there is not much point in slimming down the OS.
