I use iTunes / Apple TV as source for my cover and backgrounds. I‘ve started this back then since Apple also provides a 16x9 cover which I used as background image in Plex in order to have proper covers in the list view.
Since the new mobile updates this is kinda broken since the artwork is used and overlapped with a logo therefore it would be cool to somehow use Apple artworks for plex as an integrated source.
They provide the cover as well as a 16x9 version, the logo and backgrounds without a logo
