It is really frustrating to spend time to rip and convert all of my DVDs and Blu-Rays, organize them as instructed in the Plex Documentation and then not be able to play them in the Plex Player.
I have lots of episodes with extras which work fine on both iOS and Apple TV clients.
The only significant caveat I’ve seen so far is with extra titles containing a dash. Plex‘s agents will fail to recognize those and show the episode name as title of the extra instead. And there’s a more generic extra naming „design choice“ that’ll shorten extra titles to Opening or Ending if they contain those words (or a common abbreviation), no matter if it’s actually an opening/ending sequence or something entirely different.
If those local episode extras aren’t working for you… would you mind sharing how you’re organizing/naming the files within a show’s directory?

If you view the Aired Order, you will see that episode 01 is split into two episodes E01 & E02.
Your file size indicates that you have both episodes in one file.
It is up to you, but I always go by the Aired Order, so I don’t have to worry about editing the show to set it to DVD order etc. it makes rebuilding libraries that much easier.

As you pointed out, not all clients do support local extras on all tiers of a show.
You should be able to see those season-level extras in Plex for iOS/Android (mobile) – but not (yet) in the Apple TV app.
You can either keep them at season level (hoping for Plex to fully implement that feature at some point) or consolidate those on the show level.
To be fair, your file names already mention they’re S01 extras, so you could easily do that without losing track to what season they belong.
