Are you ripping directly into a folder which is being “watched” by Plex?
Don’t. Always rip all tracks, rename them, check metadata in a separate folder, outside of a Plex library. Only after, that move the complete album folder into a Plex library.
In order for Plex to recognise a bunch of tracks as belonging to the same album, you need to:
put all tracks into the same folder
give all tracks identical content in the ‘AlbumArtist’ and ‘AlbumTitle’ metatags. If ‘track number’ and ‘Disc number’ meta tags are present, they should be present in all files of the album.

1.“Various Artists” is the usual choice for ‘Sampler’ style albums. There may be exceptions for ‘collaboration’ albums which are credited to all participating artists on the album cover.
2. use the title of the single as it appears on the cover. You can augment that information with (CDM) or (single) or (Maxi) or (EP) as it fits. If it is a genuine release, Gracenote should have no problem identifying it.

possible ‘side car’ files for music
Little tip:
If you have lots of bootlegs etc. you want to bring your embedded metatags into order first.
Then you need to have the Local Media Assets agent in top position. I wouldn’t trust last.fm to fetch correct info about bootlegs and special editions of albums, like those recent expanded re-releases of Zappa albums.
Put as much info into the meta tags as possible. Put a cover art inside the album folder and you should be good.

You let WMP rip into a folder, on your hard drive.
If you have pointed Plex to that very same folder, then weird things can happen, as you have seen.
If you don’t want to separate the folders of WMP and Plex, then do at least disable the automatic library update of Plex. To prevent Plex from scanning a half-ripped album.

Thank you, that I can do. This did not happen previously as I ripped over 100 cd’s over a year ago. Just happening.
