I was planning on switching to the beta version of the Android TV app, but I am unable to uninstall the Plex app from my Shield.

I think with Shield version 9.x, Plex became part of the image. This had to do with all the issues the new release caused back then. Regardless, you don’t need to uninstall the stable version in order to install the beta. Only the Roku has two separate versions.
EDIT: Unless you’re talking about Plex server for Shield (which I now realize you probably are lol). I have no experience with that.
Afaik with Android 11 (Shield Experience 9 I think) they included an old version of player app in firmware same way PMS has a version in firmware. If you choose Info you can chose Uninstall Updates but like the server that won’t completely remove app.
However to run betas you should not need to uninstall as it is generally a higher version and should just over write whatever you have. Or when you choose to be in Beta from https://play.google.com/apps/testing/com.plexapp.android it should just update pubic app to whatever current beta version is.
That’s part of the confusion, unfortunately. I am in the beta program. Have been for quite a while, but had forgotten about it.
The build number reported by my app is actually higher than the currently-reported beta app.
The beta announcement thread reports the build as “9.12.0.36793-beta.” The build on my Shield is “9.12.0.36838.” Being a higher build number, I would guess that it is a beta, but lacking the “-beta” suffix (should I see that in the actual app?), I’m not sure that it is. There is no other indication within the app that it is, in fact, a beta build.
So what do I have? By the way, this was all prompted by reports of a new gong sound when the beta app launches, but that’s not happening on mine. So I was lead to wonder whether my build is beta.
That got released as stable yesterday. So, you have the latest, which is expected.
