I bought Plex in 2014 on Google Play - one time purchase.
Since then I’ve switched over to iOS and to be honest, I havent used plex that much.
But the other day when I tried watching something on my phone it stopped after a minute.
Do I need to buy Plex again for get it to work on iOS and let me watch something more than a minute at the time?
Or is it possible to activate my Plex (which Ive already bought once) on iOS? If so, where can I do that?

The one-time activation applies to a specific environment/app store. If you activate the mobile app in Google Play this will only work in that context (not for iOS or a FireOS environment).
tl;dr: you’ll need to have a separate activation for Plex on iOS.

I meant if you unlock iOS app does it unlock tvOS app as well?
tvOS app doesn’t require unlocking; that’s just for the mobile apps.
