USB DAC connection

I have a MAC mini as a music server running iTunes. My files are all AIFF format. I am outputting to a Cambridge Audio USB DAC. My question is. Will PLEX work with this system. Effectively replacing iTunes? That would be my initial goal. Then add TIDAL if all else went smooth.

Plex cannot read metadata from AIFF files. You’ll have to convert to ALAC or even better FLAC.
Then you can use Plex for Mac, or Plex Media Player or Plexamp as player software on your Mac.

I don’t think I care about meta data if that is just fluff. But if I want to convert a library of AIFF to FLAC is there a tool to do that? Will iTunes do that? If I get a Plex pass will everything else be there?
Sorry for all of my ignorance but I just want a reliable server with remote capability to play my music and future music through my stereo

You can try without, but I think it won’t work that well.

There should be software which can do it, but I am no Apple user. iTunes can only do apple formats, AFAIK.
