Use Pi 2 with RasPlex as a server/hub?

I know it's possible to set up a Raspberry Pi as a router...but from what I've tried it's not possible to do that once I install RasPlex.

Just curious, are there other ways to do this?

 

Here's my desired use-case - 

Attach storage with movies to the Pi 2.

Bring the Pi 2 into my car (with storage) and plug it into power.

Have wireless devices (tablet, phone) connect to Pi 2's wireless network.

Allow Pi 2 to serve up videos.

Caveat, right now you can’t have both PMS and RasPlex on the same Pi.

Thanks for the tip! I guess I didn't consider the fact that RasPlex is more a front end than a server. I'll have to re-think my plans.
