So I know there’s a volume boost option for audio transcoding, but I’d like one in the player, like VLC, as certain downloads have unreliable and inconsistent audio levels.

I suppose you’re looking for this suggestion? If so, please comment/vote in that thread in order to help us avoid distracting or cannibalizing votes.
I want a global audio boost in Plex and a general volume normalizer. The max volume is half that of other apps.
I propose a little slider with a plus and minus button with the DBs in the middle.
Audio Boost:
[-] 10db [+]
It doesn’t matter if you want it negative 30db or plus 60db, I just want the option to boost it globally. And don’t even with that “loud”, “louder” bullhog, give us an actual number and some outrageous ranges.
Unless I’m missing some unique aspect of your suggestion I’ll close this thread as a duplicate.

The big orange button at the top left that says Vote (above the thread title, to the right of the vote count → 121).
