Where are the settings for enabling DTS HD MA 7.1?

I just picked up Guardians of the Galaxy with DTS HD MA 7.1 for my home theater. My receiver (Yamaha Aventage) fully supports this and I have to run via Windows 10 on my PC as the Roku 4 apparently still can’t handle this.

However, playing it via the PC through Plex, the stereo says I’m getting 7.1 from the movie, but it’s coming out as stereo in the theater. The projector (Sony VPL-HW40ES) can also pass this through with no issues. I had it working before.
FWIW, I ran MediaInfo on the file and it shows the main audio stream as 48 kHz, 24 bit, 8 channels, so it’s not the film either.

In Windows 10 somehow the projector had gotten set back to stereo so I set it back to 7.1 and used the Windows Test function to make sure each speaker was working. They are.

Plex Help isn’t helping much as the references it makes I can no longer find given all the UI changes. For example, Help text says, “Setting Plex Media Player Preferences
You’ll configure your audio settings under Settings > Audio in Plex Media Player.”

However, that’s not in my settings anywhere that I can find.

Where do I go to get this working again?

Thanks.
