Where is Plex data stored? (Want to do a clean reinstall)

I did a fresh install on Plex Sever on my Windows 10 PC. However, it was populated with old data.

I want to do a fresh installation of the Plex server on my Windows 10 PC. I uninstalled Plex Server. I went through and tried to find anything related to Plex. I deleted lots of files that were left in AppData and a few other places. I then rebooted.

When I reinstalled Plex it was populated with old data. Where is this data stored?

When I opened Plex it was logged in to my account. Also, the various names of media I had on the left were repopulated although they had an exclamation point on them.

I appreciate your help. However, these instructions aren’t complete. I followed them at least three times. I was made sure to follow them exactly. I did search the registry for other odds and ends that might be there and I did find a few that I removed and that got closer to what I was looking for. However, every time it still asked if I wanted to login and then showed other stuff from my account.

Anyway, I’m good for now. I’m going to move on.
