Please enable it
Save changes
Restart the server
and capture logs when you have the issue and indicate what it was and when
Logs are recycled so please capture the logs soon after noticing the issue

Is the M:
drive where you hold the Plex Media Server app data a local drive or network mapped drive?

Network drives is not supported as sqlite3 database would easily get corrupted
The gracenote database is probably one of the gdb cache databases which you can delete and it would get recreated. Delete when the server is shutdown
