I would like to restructure my movie library folders in Windows. If I follow this guide, will it maintain the order for date added? Or will it see everything as new content?

Since this guide also describes how to move your database (the plex database, not your content) everything should be as it was, before you migrated your content, including date added tags.
If it helps, i’ve been moving some movies from 1 synology to another and when when the system rescans the movies they show up under the “recently added” area. Not a issue or concern for me but it may be an inconvenience for some people. Its how I would expect it to work though, mostly. Media is being deleted from 1 volume/share and new media is showing up in another volume/share. Could the system say “hey this is the exact same thing”? Sure it probably could (speculation) however it doesn’t currently.

What used to show up as most recently added no longer does. Something that was added a year ago is showing as most-recent. I used “rsync -av” to copy everything over to the new place, and I’ve checked the creation dates of some files – and they’re correct.
How do I move my content to a different location AND maintain all of the meta data including when it was added???
I don’t know what you exactly did but here is how I did it the last time I moved around some stuff and it worked.
I had my Movie library previously only in X:\Movies but wanted to add a few movies to Y:\Movies (newly created folder). So I edited the library in Plex to watch both folders. I then **copied ** the movies I wanted from X to Y, let plex scan, deleted the movies from X:, let plex scan and everything was fine.

So… I did the first two parts, but haven’t yet “removed” the “old” library.
You’re saying that even though “recently added” is all wrong now, removing the old version of the library will suddenly make the new version’s recently added be right??? HUH? Really?

If you created a new library then the method will not work.
You were supposed to edit your existing library and to add the new folder additionally
After a ‘Scan Library Files’, your posters should all have shown a little 2 on top of it. That is the sign that the method has worked.

SO… I DID exactly what was described: added a folder to an existing library after moving all of the files to a new place and after making sure “remove trash” was off, etc. But the library now shows a whole new ‘recently added’ dates etc.
My latest question was: So, if I edit that library and remove the original FOLDER, will the recently added date suddenly get corrected???

Therein lies the problem. You were supposed to copy, not move the files. And after copying, scanning and seeing everywhere the little 2 on the cover (indicating that plex sees 2 versions of the movie), deleting the files in the old folder.
Dang… I COPIED everything over using rsync — as I said in my original post! Sorry to have used the wrong word. AND I did repeat that I see the little “2” on everything in the library!!!

Well in that case I am really of not much help for troubleshooting. I did the same steps as you twice while migrating to bigger storage and I never had your problem.
Maybe you could (I don’t know if this is possible so you need to google for yourself the how and if) reverse everything by going back to a (hopefully during scheduled maintenance created) library backup?
