Windows crashed, new server, can i get my watched lists back?

I had a server for years finally the computer wont boot. So i did set up a new server, and added all files back in (well its refreshing now) i do have access to the old windows ssd. It works, just wont boot, is there a way to copy my old watched lists from somewhere on that drive to my new one? If so where would I look? And do i just copy them to the new computer into the same directory?

You would have to copy over the whole old Plex data folder from the SSD to your current machine.
Do this while Plex server is NOT running.

If the old machine was crashing or went off while Plex server was running, you will very likely have to activate one of the backup databases: https://support.plex.tv/articles/202485658-restore-a-database-backed-up-via-scheduled-tasks/

For best results, you want the media files in exact the same location as they were before. i.e. same drive letter, same folder, same file name.
