This one has me baffled. If I use the Plex App on my Xbox one I am unable to connect to my server remotely at the same time. To be able to connect remotely again I have to unplug my Xbox. Has anyone else had this problem or have any clue what is causing this?

Could you please provide more detail on 'unable to connect to server remotely'? Are you using another client, or trying to login to the server? Or something else?
Sorry you're having trouble. I've not seen reports of this before.
If I am using the Plex app on the xbox one I am unable to connect to plex remotely using my iphone and the ios app. Now if I turn on my Wifi on my phone and connect to my local network then my server shows up. I don't know what but somehow while Plex is running on the xbox it is blocking any connections to the server from the outside and those connections aren't restored until I unplug the xbox.
This may sound stupid but can you confirm that both your Server and Xbox are getting two distinct different IPs?
It looks like my Xbox is on 10.0.0.9 and the server is 10.0.0.10. I just got a second xbox one that connects via wifi as does my Xbox 360 and neither of those cause the same problem as my one wired xbox.
