epg123 will generate an xmltv file for use by programs that will accept it and Plex has a place to enter it. epg123 gets data from SchedulesDirect which is in-turn from Gracenote and is up to 21 days of data. Plex gets it’s guide directly from Gracenote it would seem.
The inbuilt option is more convenient for most users.
BUT: if Gracenote doesn’t list your particular channel line-up, you can create your own lineup with EPG123 (at least I hope they offer this).
Besides potential convenience, which data is better? Maybe I need to try it out and see.
BTW, I enabled “Enhanced Guide” and even though it says it takes longer, it is still running, saying it is at 100% but it also says, “Optimizing the Database” since yesterday.

Since the XMLTV data must pass 1 or 2 ‘hops’ more, I assume they won’t reach as far into the future as the Gracenote data.

I’d disable the enhanced guide. This will try to augment the EPG data with additional info from TheTVDB. In my experience it has the potential to complicate things, since it’ll require more RAM in the server.
