YouTube channel does work perfectly fine with PlexConnect, I use it all the time.
What happens if you reboot the ATV with the DNS pointing to PlexConnect ?

Another question, what is the procedure with the new firmware 7 ?
Easy method - switch DNS to auto and update right from aTV to new iOS.
Hard method - hook to iTunes and update using DFU with a new ATV ipsw.

The easy method should preserve your settings (native app logins, ATV certs). The hard method would require you to re-enter everything back into ATV.
