I am using PLEX and I have a documentary with two part. so there is two file and I when I click on ‘information’ I see the two file. But how we can put the next movie I dont see any option?

You might want to look into the naming schema/convention expected by Plex… this will save you a lot of trouble.
As for that particular case… based on your current file names, Plex considers this is two versions of the same movie. You can find a menu item Play Version
in the ...
context menu of that movie.
That being said… you can follow the naming instructions in this support article to make Plex recognize that this is two elements of the same movie:
Naming should look like this:
Movies
Leaving Neverland (2019)
Leaving Neverland (2019) - pt1.mkv
Leaving Neverland (2019) - pt2.mkv
Alternative:
You can use a tool called MKVToolNix to stitch the two files together. In the long run, that’s the most reliable way of dealing with such files

I have updated the name and now it show 1 file with two part. But Where can I launch only the part 2? Because when I click on play button it launch the first one and I have to watch this one to access the second part.
What about if I want to see only part two first? is there a way?
If you want to treat these videos as separate items in your library, you can split the record:
You cannot play the individual files while they’re merged into a single item. That being said… if your files have chapters, you should also be able to jump right to the chapter the 2nd file starts with.
