is it possible to add another my cloud home nas to to plex alongside my current my cloud home nas???
You can do that – however considering the Plex Media Server on the WD NAS is “hard wired” to the predefined media folders you might end up with 2 independent Plex Media Servers (one on each NAS).
This restriction does not apply on other platforms… so if you opt for e.g. a Synology or QNAP (etc.), you can setup / move your actual server there and connect the existing MyCloud NAS drive(s) as an external data source (1 PMS w/ the underlying files distributed across 2 NAS)
