As long as it’s actually the same episode (e.g. same duration) and assuming the videos don’t have any special visual cues/visuals/extras, you should be able to mux the „commentary“ video’s audio track into your regular episode file. … that should at least deal with this particular use case.

Can I do that within plex or would I have find an external tool/program to do this?

Would be great that there is multiple versions of individual episodes like a lot of Doctor who episodes does.
