I currently have a list of shows to record in my old DVR. I would like to transfer them to Plex DVR, but a lot of them are not currently in the EPG. Is there a way to add these shows to the recording schedule?
You can only schedule recordings for shows available in the EPG.

Are this shows that are currently between seasons and just not broadcast at the moment OR are these shows that are currently being broadcast but just not showing up in the EPG?

They are shows that are between seasons at the moment. It would be useful to add all my shows, rather than wait for them to appear in the EPG first.
A couple of suggestions.
Many shows are in syndication or repeat off-season. You may be able to find them in Plex when doing a search. If you get a hit, specify that you only want new episodes and you can specify the channel as well.
You can use a service like FollowShows. This will give you a list of shows (that you make yourself) that can help alert you of the resumption of series you are interested in as well as their regular airing scheduled. You can then manually enter that info into Plex before the show airs. Think of it as setting an alarm for your shows. You can get prompts on your smart phone, tablet, pc or smart watch. It’s all free. The main problem with FollowShows is that they don’t seem to make any regional distinctions. So for example, if you live in the USA and want to watch Doctor Who, they only give you the air dates for the UK.
Lastly, I’ve suggested before that Plex should add some mechanism that allows the user to prompt Plex to be on notice to record a specific show even when it’s off season or at least alert the user when a show the user is looking for (has looked for) shows up in the guide.

Also, for the love of God, why the hell shouldn’t we be able to setup a recording for anything already in our Plex library? I mean this really does make sense.
I’ve suggested to Plex they allow marking the TV Show right in the TV Library without even having to enter the DVR portion of the program. This way when ever you add a new series you can flag it in the library for series recording and be able to specify all the normal stuff like padding, comskip, NEW or missing shows, etc).
To me this would be a perfect union of the existing framework and DVR.
