Im having an issue… The hard drive I keep the plex metadata on is at 100%. I cant stop it from being at 100%. Plex crashed, the drive stopped its 100%. I reload plex, back to 100%. I reboot… TWICE. Load plex… back to 100%. I uninstall and downgrade my plex… load plex. back to 100%. I need to stop whatever maintenance it wants to do on my drive that it should have done at 2am.

Get logs after a crash so that we can see what it is that is running
See

https://support.plex.tv/hc/en-us/articles/200250417-Plex-Media-Server-Log-Files
Once you get the logs you can look into the scheduled tasks server settings and deselect tasks - but best to know first what it is
So get logs and note down the time periods the disk was at 100% and post here with the attached zipped logs
