Plex has a mechanism to avoid re-cataloging files you had already added if you e.g. simply fix the file name. This is working against you if you try fixing the naming of your files in order to get them to match.

The procedure to overcome this “obstacle” is called Plex Dance.
Drzoidberg included a brief summary in his post. The full procedure goes like this:

1. Move the show’s folder (or individual files) you’re going to fix from the folder linked to Plex
2. Inside Plex: Click on ⋮ > Scan Library Files for the applicable library
3. Inside Plex: Click on ⋮ > Manage Library > Empty Trash for the applicable library
4. Inside Plex: Go to Settings > [Server Name] > Manage > Troubleshooting and click Clean Bundles ← this step is not absolutely necessary
5. Fix the file names / folder structure and move them back into the folder linked to your Plex library
6. Repeat #2

The Plex Dance ™

The purpose of this is to remove all cached metadata and xml data for an item that Plex usually keeps.
