I am getting stuck during DVR Setup; when selecting language and postcode the “continue” button never becomes clickalbe:

This is sort of resolved. The underlying problem seemed to be missing EPG data for the region (resp. postal code).
With newer versions of the plex server it is possible to work around the problem by intentially choosing a wrong postal code (which is however known by plex) and then do some manual channel matching. This is far from ideal since the displayed channels chodes and the EPG channel codes are both crypic and you have to do a lot of guessing.
