I created a user named “Anaïs” and it was replaced by “Ana?s”.
I think it’s a bug.

Which server platform?
Which web browser is used on which platform?
Does the ? appear in the web app or on a different plex app?
I just tried it on my Windows based server and it works as expected:
Server is ubuntu 18 LTS, client is OS X High Sierra.
I edited the user directly via chrome on the Plex server and it solved the issue.
I then tried to reproduce by editing from Plex Player on OSX but it’s still ok.
