If not, here is what I have, and maybe there is a workaround, or better way.
I have things like workout videos that I want on Plex. But I do not want an individual library for each collection, and I certainly can’t have the videos all thrown into the same library. What would be the best way to handle that?
You can have sub-folder in the library’s main folder, but not as you are thinking. The idea you suggest is actually a collection, and collections aren’t an option as you envision them to be. There are a number of feature requests for this already, in the Feature Request forum.

The biggest issue with implementing either of these is getting the Plex Team to do it. With the recent work we’ve seen from them, it’s not high enough on their radar to make it a reality soon. Instead of added functionality and increased reliability we’re getting simplicity and generic interfaces… Perhaps with enough votes for the features we actually want we might get the things that can make a difference to those of us running servers… (I’m really beginning to question if any of the Team still uses Plex for their own media.)
There is a way to do what you want in Plex. It is a bit of a kludge but it does work. That is you use a TV library and set Personal media as the agent. A structure like this wold work:
…Hard work <- This is what the name would be in Plex
…Season 01 <- This is required for naming but is really just container for the videos
…Hard work - s01e01.ext
…Hard work - s01e02.ext
…and so on for each video in the “Hard work” series.
…Easy work <- This is what the name would be in Plex
…Season 01 <- This is required for naming but is really just container for the videos
…Easy work - s01e01.ext
…Easy work - s01e02.ext
…and so on for each video in the “Easy work” series.
This would continue for each set of videos you want collected together and you would access them just like a TV library except there would be no posters or metatdata unless you add it manually.
I use that structure for several “special” types of videos that I want grouped together but do not work as part of the “regular” Plex structure.
The naming using “sXXeYY” is important. The XX and YY can be three digits if needed and you can even use multiple seasons under under each type to have “series” of videos grouped together.
Using this things like continuous play work just like they do in normal TV libraries.
I find that sometimes you have to get creative to get Plex to do what is wanted.
