The basics: Ensure that you have a folder structure like this: https://support.plex.tv/articles/naming-and-organizing-your-tv-show-files/

In some cases, the file path names can get too long, when you include such a silly long show title into both the folder name and the file names.
Try removing the show’s title from the file names, but leave it in the folder title.

The Plex Dance may also be helpful after mismatches and subsequent renamings.

If all else fails, you can also try to shorten the show folder name a bit and maybe try it with

/anime
   /I Want You To Make a Disgusted Face {tmdb-80867}
      /Season 01
         s01e01.mkv
         s01e02.mkv
         s01e03.mkv
         ...
