Can't watch 1080p HDR movie on Apple Tv 4K

Hello ! I have a few 4K movies only and i use Handbrake to convert them to 1080p, since my server doesn’t handle 4K. When i do that, they appears on Plex as 1080P HDR. But i can’t watch these movie on my Apple TV 4K. I can convert them to 1080P “normal” in the “Playback Settings” of the Apple TV app, but i’m wondering what can i do to make it work directly, without having to do that ?

My server is on a 2012 Mac Mini, with Ubuntu. I have Plex Pass and hardware transcoding seems to be working.

Edit : I’m also thinking of using a old 2017 iMac (features a 14-nm “Kaby Lake” 3.4 GHz Intel “Core i5” processor (7500) and a Radeon Pro 560 graphics processor with 4 GB of dedicated VRAM) if thats better for Plex or open to the idea of buying something else at this point if it’s cheap. I just want everything to work for the older people using my server.
