It should be possible to configure your library to prefer embedded metadata and to provide the cast information to the files themselves. Plex can read embedded metadata from mp4/m4v/mov files.

That being said – Plex won’t give you the same experience with cast information from embedded metadata as it can based on the metadata sourced online (e.g. there’s many same-named persons and Plex has no way to know which one you mean just by the bare name; here’s an example of various Tom Becks on IMDb)

I guess this is kind of a tricky topic for Plex to handle automatically. Some of the online sources are listing localized voice cast information for japanese Anime – though they’re usually focusing on the English Dub. Looking at some Studio Ghibli releases, there’s even different casts for different releases (e.g. original English dub vs. later Disney dub). Also… if your items have multiple audio tracks – for which of them should Plex pull the voice cast (assuming the data is even available)?

TL;DR: it’s tricky and I’m afraid there’s no simple solution. You can try to squeeze the information in using embedded metadata but that’ll have its own downsides.

None of the metadata sources which Plex is using is suporting “dub” voice talent.
For instance TheMovieDB.org has a policy which disallows explicitly to add any voice actors which are not in the original Japanese version.
