When I change a movie poster, it’s downloaded to the movies folder. Can I create a folder just for posters? I want a folder for the movies and another one for the posters.

Posters are either stored in an a subdirectory (named for the movie) with the movie and poster in it, or they are stored with the metadata.
ok… and the metadata can stay in a different location than movies? If it’s possible, how could I do it?
Metadata stays within Plex. This part is preset. PMS indexes the movie and assigns it a “Media_Item_ID”. All the textual metadata and other base information is stored within PMS in a directory under “Plex Media Server/Metadata” for precisely that purpose.
I have my movies on the NAS all together in a “share”.
Plex keeps all its things together under the program itself.

Yes, but i want 2 differents shared folders in my NAS. One for the movies and another one for the posters and .nfo. But I think that is not possible… 
It’s possible but I wouldn’t guarantee it forever.
/nas/share-1/Movie (Year)/Movie (year).ext
/nas/share-2/Movie (Year)/Poster.jpg
Both locations would need be included in the list of folders.
Local Media Assets must be enabled.
If it’s going to work (fool the scanner), the above would do it.
