I know how to access and change MOVIE TITLE/SORT/META info but I cannot find this feature for TV shows or episodes?

when logged in as the admin (one with the Crown image) mouse over the the item you are trying to change and in the lower Left corner of the poster is a little Pencil looking thing. clicking that should get you where you need to go 
Or you can change it per episode here:
To edit the Sort order, go to settings (Gear and wrench upper right corner)
then to Libraries (Part of the ‘Manage’ Group at the bottom of the left side)
then next to TV Shows, Mouse over it and click on ‘Edit’
Sort order will be in here

I am the only user so I am the admin.
When I click on the PENCIL/EDIT icon, it brings up this page (below - like the MOVIES page, I can edit fine) BUT I cannot bring up the episode menu to further edit? I have looked through all the menus after I click EDIT - they all make sense but nothing about the episodes …

What about the episodes do you want to edit?

are you referring to incorrect episode titles
e.g.
Season 1 episode 1 in plex, but when played it is actually Season 1 episode 10?
Something like that?
If so, this is where I don’t have easy solutions. My best that has worked for me so far is to head to https://thetvdb.com and look of the show there. Then click on the Season that you are referencing. Here is a screen shot from Batman the Animated Series:
So you would select Season 01, and note the naming. You then can take the time to name each file with the correct run time and Plex will fix it from there. In the case of Batman, it should be as follows:
Batman.The.Animated.Series.S01E01.The.Cat.and.the.Claw(1).mkv
This naming method has had 100% success for me and I Highly recommend it.
I will use a combination of Excel and Notepad to get it done.
First I Copy the table from TheTVdb and place the S01E01 in column ‘B’ and the Episode Title in Column ‘C’
I place the name of the series in Column A. I type that out and then copy it as many times as I need to.
When pasting make sure it matches the destination formatting:
Then just simply Sort by Column B to get rid of the extra lines:
Copy the show title all the way down, and then paste the whole thing in NotePad
Then use Ctrl+H to find replace the following:
Tabs (highlight the Tab before pressing the hot key) with ‘.’ periods
then spaces with ‘.’
And rename each Episode using your template

Here comes the part that pisses a lot of people off.
When getting your shows from a DVD series, there are two different orders that they come in. “Aired Order” and “DVD Order”
Now luckily for me, they are named correctly so all I have to do is find the right episode and rename it:
Now what if there is no information to help you there?
Head back to TVdb and in that Season section there should be a DVD Order, click there and that should help you see where things moved around.
Plex will need it in Aired Order, and you will have to fix that. Now I personally wish I had better advice and something cooler to use. But this is how I got my Conan, Dragon Ball Z and Batman the Animated Series on my Plex server so that my boys could enjoy them without destroying my DVDs
