Sometimes, when I switch users in the Android TV Plex app, my pinned sources/libraires will be reset and lost.

Latest beta Release Announcements - Android TV beta should fix the issue. Unfortunately you won’t be able to recover your pinned sources (sorry for that!), but at least you won’t lose them again.
No worries for the pinned sources.
Unfortunately I won’t be able to test your fix because I never succeeded to reproduce the problem after my initial report.
I will mark this as resolved after several weeks of usage
