i don’t quite understand what Collection > Edit… > Advanced > Collection order = Custom does
how is Custom collection order defined/set? how can I sort a Collection by My Rating?

Simply ignore it. It doesn’t do anything.

No. Only the options which are shown in the properties of the collection.
