Content posters are gone after plex runs for 24-48hrs. I have to reboot the server to fix

I don’t know what gives, but Plex always wants to remove the metadata poster after the server runs for 24-48 hrs. The only fix I have is to restart the server which can be annoying. Is there a known fix for this?

Server Info:
CPU - AMD 5950x 16core processor
RAM - 128Gb RAM
Plex MetaData Directory: Successfully moved to a dedicated SSD 1TB drive
Transcoder Cache Directory: Dedicated RAMDISK drive of 15Gb from my RAM
