The converter will not optimize movies in multi-part form such as “Movie - dvd1”, “Movie - dvd2”. It will report “invalid metadata” instead. The last post I could find on this is several years old, maybe there is some progress? It would be warmly welcomed.
Consider joining the parts into one file. Not all Plex clients work well with multi-part movies. You might be better off joining things together.
From my knowledge of multi-part movies is the files must be the same.

Notes:
Not all Plex apps support playback of stacked media
All parts must be of the same file format (e.g. all MP4 or all MKV)
All parts should have identical audio and subtitle streams in the same order
Only stacks up to 8 parts are supported
“Other Videos” libraries or those using the “Plex Video Files Scanner” do not support stacked content
But nonetheless, I still don’t think plex has the ability to optimize multi-part movies.
