I can see one failure here

Mar 23, 2021 01:05:16.120 [15880] ERROR - [Transcoder] [tcp @ 00e78980] Connection to tcp://192.168.0.105:5004 failed: Error number -138 occurred
Mar 23, 2021 01:05:16.121 [15880] ERROR - [Transcoder] http://192.168.0.105:5004/auto/v11.1: Unknown error
Mar 23, 2021 01:05:16.125 [11808] DEBUG - Jobs: 'D:\Program Files (x86)\Plex\Plex Media Server\Plex Transcoder.exe' exit code for process 11760 is 1 (failure)

This type of failure has been seen when windows runs out of dynamic tcp ports

Can you open windows Event Viewer and select Windows Logs and then System and then filter on Event IDs 4227 and 4231 and see when those arose

It tends to happen when scanning large libraries Movies, TV Shows

Upgrading libraries to the latest native in-line scanner/agent mitigates this as the scanning is in line and not in separate process. Also a fix to a curl bug will help reducing port usage by 66% - this is not yet in PMS and is expected in version 1.23.x. Also reducing the frequency of periodic scanning reduces the chances of running out of TCP ports impacting other tcp actions such as communications between the transcoder and the plex media server processes
