I’ve created a separate library for hot documentaries.
I can see the videos here, but they’re all separate, and I can’t seem to get them to appear together, like (series name) > season 1 > episodes 1, 2, 3, and so on.
If these are extras which pertain to a certain show or movie, you better add them to that movie or show directly.
If they live in a separate library, a Plex user has a hard time to navigate through to them, or they might not even be aware that those extras exist.

I’m watching on an Android TV, so that doesn’t work yet. I can see it on my Android phone. But the name is an old one from an hour ago. I changed the name and scanned the library, empty the trash bin, but nothing changed. I then removed the extras from the map so Plex can’t find them anymore, and they remain permanently in the Plex app (I just can’t play them, of course, because then I get a failed error). What could be the problem?
When I go to the Plex website, there’s always a message that I need to get an update, but my NAS says there’s no update available?
Extras are a bit cumbersome to change.
Remove the file first.
Then Refresh Metadata of the whole show. Verify that the extra is no longer shown.
Then re-add the file with the correct name.
Refresh Metadata again.
If you want to change other aspects of an extra, like adding subtitles or changing the video quality etc. do it the same way.
