I love the plex mobile app but it would be great for it to have a type of 'remote' so that browsing is as easy as possible. If you could browse the catalogue and set it to play on the server instead of the device that would be amazing!

Well, if you install a Plex client like Plex Home Theatre (Plex/HT) on your server, then yes it is possible to use Plex/Web, Plex/iOS and Plex/Android to browse the catalogue and issue play commands from it to Plex/HT. I do this every day.
Unless I am completely missing the point, I'd like to see this thread closed.
