Can someone tell me where i can turn-on an option that would allow me to gather logs older than just the current day ?

Disable “verbose” logging.
Keep only “debug” logging active.
Then restart the server.
If that still isn’t enough because you are scanning all libraries daily or have dozens of users playing from your server every day, you can increase the number of log files to be kept in “rotation”.
Add the hidden preference LogNumFiles to your server configuration. Advanced, Hidden Server Settings | Plex Support
Don’t use numbers above ~30.
