I have the latest version of Plex and it says I'm connected. Why does the xbox see my server and still not connect?
What is your setup? Wired/wireless, NAS, etc?
Did you download the server from the "Plex Pass Downloads" section?

You going to have to be more specific here. How do you mean the xbox sees your server and doesn't connect? Is there an error displayed?
1. The current version is 0.9.11.1, double check you have this version.
2. You've connected your server to plex.tv https://support.plex.tv/hc/en-us/articles/200484543-Connecting-a-Server
3. After doing the above you have 2 green checks under Settings -> Server -> Connect
