I made a plex migration some weeks ago, and it seems that everything was migrated but, not all of collections data, so I only have some of them, for the new films I have been entering. Do you know how can I rescan all my collections?

It looks like all the collections are there… except for their content.
If the movies are still in your library and you have Use collection info from The Movie Database enabled in the advanced library settings… updating the metadata for the library should bring things back.
Personally I’m not a big fan of the collection info provided by The Movie Database… there’s some rogue users putting every other movie into its own collection

Yes I have the collections enabled, if I click to scan all metadata, and I have some films with the identification modified, will the change of name, or will my manual identification maintain?

If you manually update titles or descriptions, this usually results in that field being locked (the little lock next to it is highlighted in orange). When updating your library, those fields will not be overwritten.
Updating the library metadata will also only look for metadata of movies that have previously been matched / associated to a movie title in one of the online databases used by Plex.
