I have an age restricted account set up in my Plex Home for my kids. I noted recently that some movies that I believe are suitable, which exist in my library were not available to them. I went into the main account and “Granted Access” to the movie to them. It does not work though and the movie is still not available to them to watch. Can this be resolved? Perhaps there is a better way to personalise the restrictions on content?

That won’t do anything, as the age restriction is still in place.
Remove all those “single item shares” again, before continuing.
You will have to use a custom restriction profile, which allows you to both deny and allow access on either agent ratings and sharing labels.
