My Plex has been working well on my Nvidia Shield for a couple of years then in the last couple of days it will disconnect from the external hard drive in the middle of watching a film or TV show only staying connected for an hour or so once I restart the hard drive before disconnecting again. Strangely though I can still access the hard drive remotely through the network and add and remove files throughout. So the Hard Drive is still accessible whilst connected to the shield but the Plex app has stopped reading it?
Having the same issue but with SMB connections. Some recent update, is causing the server to just “freeze” all connections to storage mid-song, or mid-movie, seemingly randomly, but about every 24-48 hours it will happen, and I have to reboot plex to resolve. The drives work fine for everything else.
Mine is now freezing 5 or 6 times a day
It happens to me too… It’s a Plex Server problem…
I hope they fix it soon…

As a curious fact, if I go to my Nvidia Shield and open the Plex Player and change any user to the root user, the server is available again for a while, 20 or 30 minutes for all client devices and all users…
