I moved my plex installation to a different location, so I backed up my old installation and copied it to the new system after installing plex there. Is it normal that plex has to re-add all metadata etc?

I’ve never done this, but you might want to take a look at this page and compare it to the steps you took. If everything is still intact in the original location, you may be able to try again.
I bet you forgot to copy the registry settings.
This way your PMS on the new machine got a new ‘machine identifier’. Thus you see now 2 servers, even though they share the same name.
The other thing is with your media files. They must be reachable under the same drive letter/share/folder name as on the old machine, or you indeed have to rescan your libraries again.

Both machines are Docker/Linux machines, so no registry. Both use/used the same media path.
To get rid of the old Plex instance, you need to delete it from your device list.
But I also don’t know whats up with the metadata, maybe just a permission problem?
Did you already tried to delete (create yourself a backup of it) the “preferences.xml”? Try to use the init wizard and see if plex finds your libraries.
