As far as I know, they should still be there. If they’re not, they were probably deleted when you accepted the invitation. You’ll have to recreate them.

Edit: I found this post from one of the ninjas. That should mean that your users and other server configs should still be there:

Not an Admin of my own server

To be clear, that does not mean they are the admin of your server. It means they are the admin of the Plex Home that you joined. You still have full access to your server. Your friend does not have admin rights to your server. If you want to be the admin of your own Plex Home, leave your friends. Have them reinvite you as a regular user, not a Plex Home user.
