How do I change the login method? I’d prefer not to have my entire user list showing to each person who is being shared to on my account.
That would be the Plex Home quick user switcher. You can’t change this. It is a feature of having a Plex Home. If you don’t want this shown, don’t use Plex Home. Or if there are only a few users you don’t want listed in there, remove them from Plex Home, but leave them as a friend. They will still have access, but won’t get that list or show up in that list.
Not certain of how Plex would work without Plex Home. Is there a guide to how to configure/change the behavior of it somewhere?
You can’t change that behavior. Plex will work the same with or without Plex Home. The differences are that users cannot switch to another user easily. They’ve have to log out/log in for each user. Also, they lose the features/benefits that are only available to Plex Home.
If you saying that a user can be removed from “My Home” without being deleted from the “Friends” section, then what does it look like on their end?
Yes, you can remove them from Plex Home and leave them as a Friend. A friend will log into an app (where a username/email and password is asked for). For apps with a link code, they link the app just like you did. UI wise, nothing changes except they don’t get that option to change users, they will only see “sign out”, so they can change to another user if they want.
What features would they specifically lose if only included in the friend vs being included in the Home section?

The features specific to Plex Home that I can think off the top of my head are
- ability to activate mobile apps
- access to LiveTV
- quick user switching (you don’t want this anyways)

An important difference is, that a Friend user needs his own email address, which is used to create a regular account on plex.tv
A friend is not created as a sub-account of the server owner’s user account.
If you have a user set up under Plex Home and they have been using it for some time. When you send them an invite so they can login with email address / password. How do you sync there data to the new account. I tried this with a user account and when the user connected they could only see the Admin account and nothing else. All the show’s / movies choices were missing from the new “Friend” login.

You cannot do it.
Users who are not living with you in the same household should never get invited into the Plex Home.
